Oatmeal cake with broiled coconut topping

  • 1 cup quick cooking oatmeal in 1 1/4 cup hot water.  Set aside.
  • 1/2 cup shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 cups sifted flour
  • 1 scant 1/2 tsp salt
  • 1 rounded tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla

Cream shortening and sugars adn eggs and beat about 5 minutes

stir in oatmeal mixture and add vanilla

mix flour, salt, cinnamon, baking powder, soda and add in.

bake at 350 degrees for 35-40 min

When cool, mix 6 tbsp melted butter, 3/4 cup brown sugar, 4 tbsp milk and 1 cup coconut.

spread on cake and broil untill brown. watch so it doesn't burn

1/2 ingredients for small cake.
350 degrees for 30 min.

Black magic cake

1 3/4 cups flour
2 cups sugar
3/4 cup cocoa ( Hersheys )
2 tsp baking soda
1 tsp salt

2 eggs
1 cup strong black coffee
1 cup sour milk - 1 tbsp vinegar + milk to make 1 cup sour milk.  Let sit for 5 min.
1/2 cup veg. oil
1 tsp vanilla

Combine dry ingredients and eggs, coffee, milk, oil, and vanilla

Beat at medium speed fro 2 min. Batter will be thin

pour into greased and floured 9x13 pan or 2 9 in. rounds

bake at 350 dgrees for 35-40 min. 30-35 min for the rounds.

Crock Pot Chocolate Cake

After cooking a big dinner, the last thing you want to do it make dessert too. Let your crockpot do the cooking with just a little prep on your part! Whip up this decadent chocolate cake ahead of time and serve right after dinner. Add some delicious chocolate frosting or serve with ice cream for an even sweeter taste!

Ingredients:

  • 2 cups white sugar
  • 1 3/4 cup flour
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 tsp vanilla
  • 1 cup boiling water
Directions:

Spray your crock pot with non-stick cooking spray. Mix the dry and wet ingredients separately. Once combined, whisk the boiling water into the wet ingredients. Add all wet ingredients into your dry mixture until well combined. Pour the cake batter into the crock pot and let cook on low for 3-4 hours until the cake has no wet spots and has started to pull away from the sides of the pot. Turn off the crock pot and allow the cake to rest for 30 minutes.

Honey Bun Cake

"This cake tastes just like the name suggests - like a honey bun. It has been served to hundreds of people and everyone has said how much they liked it. It is a sweet cake and not for those that are watching their weight. Tastes wonderful if served with a small scoop of vanilla ice cream."

INGREDIENTS:
1 (18.25 ounce) package yellow cake mix
3/4 cup vegetable oil
4 eggs
1 (8 ounce) container sour cream
1 cup brown sugar
1 tablespoon ground cinnamon
2 cups confectioners' sugar
4 tablespoons milk
1 tablespoon vanilla extract

DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large mixing bowl, combine cake mix, oil, eggs and sour cream. Stir by hand approximately 50 strokes, or until most large lumps are gone. Pour half of the batter into an ungreased 9x13 inch glass baking dish. Combine the brown sugar and cinnamon, and sprinkle over the batter in the cake pan. Spoon the other half of the batter into the cake pan, covering the brown sugar and cinnamon. Twirl the cake with a butter knife or icing knife until it looks like a honey bun (or whatever design you want to make).

3. Bake in preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Frost cake while it is still fairly hot. Serve warm.
4. To Make the frosting: In a small bowl, whisk together the confectioner's sugar, milk and vanilla until smooth.
